Fluffy Keto Pancakes with Blueberry Sauce

This is a wonderful recipe for some fluffy, moist, soft keto-friendly pancakes that will just melt in your mouth.  We’ve been working on a perfect recipe for this keto pancake for quite some time.  These go great with sugar free pancake syrup, and some of our quick and easy blueberry compote (just a pretentious name for syrup, thanks Cody!)  If you thin them out, enough, these would make for excellent crepes….

I think I just gave myself and idea for a future blog post…. keto-friendly nutella inspired crepes anyone?

A few key ingredients I’d like to discuss is the xanthan gum and the erythritol.  Xanthan gum is a fantastic additive, especially for keto recipes when you are trying to achieve a nice fluffy consistency when using almond flour.  I highly recommend you do not skimp out on this ingredient.  Also,  as far as sweeteners go, I almost exclusively use erythritol.  It may be a little more expensive than stevia, but it makes a world of a difference, and it doesn’t have that bitter aftertaste.

Now for the recipe: I hope you all enjoy!  These are so tasty! You just wait.

Pancake Batter

  • 1/4 C Almond flour
  • 2 oz cream cheese
  • 1 tbsp almond butter
  • 2 eggs
  • 1 tbsp erythritol
  • 1/4 tsp salt
  • 1/4 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp xanthan gum
  • 1 tbsp half and half
  • 1/4 C water

In a blender, add all ingredients except the water and then blend until smooth. Once blended, add a small amount of water at a time to achieve a pour-able consistency.

Next step is to preheat electric griddle or nonstick pan to a medium heat.  Once heated, apply generous amount of butter to avoid sticking.  Ladle 1/4 cup of batter at a time to create pancake.

Blueberry Sauce

  • 1/4 C frozen wild blueberries
    • I like the “wild” ones because they are small and seem to taste better
  • 1/4 C erythritol
  • Juice of 1/2 a lime
  • 1/4 C Water
  • 1/4 packet unflavored gelatin
  • 1 tbsp butter

To begin, in a small saucepan, cook all ingredients but the gelatin and cook over low heat until simmers.  Once simmered, sprinkle gelatin into the sauce and briskly mix until gelatin in incorporated and sauce begins to thicken.  Remove from heat and serve with pancakes as desired.
