Keto Low Carb Chili Cheese Dogs

Keto Low Carb Chili Cheese Dogs

Keto Low Carb Chili Cheese Dogs are a thing!  You really won’t even miss the bread or beans, plus this classic recipe is so filling and delicious.  I recommend serving it up with my Jalapeno “Corn Bread”.  This is super easy to make too!

Ingredients:

  • 1 1/2 lbs ground beef
  • 4 hot dogs
  • 1/2 red onion
  • 1 tbsp olive oil
  • 1 tbsp fresh garlic
  • 2 tbsp tomato paste
  • 3 tbsp paprika
  • 1 C water
  • 1/2 beef bullion cube
  • 1 tsp cayenne pepper
  • 1 tsp red pepper flakes
  • 1/2 C shredded sharp cheddar cheese
  • salt and pepper to taste
    • careful with the salt as the bullion cube can be very salty
  • Mustard
    • optional

Preheat dutch oven or pan on stovetop on medium heat. Then, add olive oil and allow to heat for approximately a minute, and add the garlic and (most of) the onion and allow to saute for about two minutes.  Add the ground beef and seasonings, and allow to cook thoroughly for approximately 5 minutes.

 

When the meat is completely cooked, add the tomato paste and allow to cook with the meat for about 3 minutes, then add about a cup of water and simmer, stirring occasionally.

In the meantime, you can cook the hot dogs.  I recommend first grilling them on some type of cast iron grill, or bbq, but if not, you can just chop them up and add directly to the meat mixture.

Once the water has cooked down, and the mixture has thickened, remove from heat. Then just add cheese, onion, and mustard as desired and serve.

**In this recipe, we actually pickled the onions for a more interesting taste. To do so: Saute onion with a small amount of oil in a small pan, add 1 tbsp red wine vinegar, and continue to sautee until liquids evaporate. That’s it.
